What do you get when you combine your favourite dip with your favourite sauce? Pesto hummus of course! Now I’m not normally one for combining things that already delicious on their own. But for some reason, this dip was calling me. Especially as we head into summer, the basil and lemon bring a wonderful freshness to this particular hummus concoction.
Now, you’ll be nice and familiar with the process. You basically make hummus, and then make pesto on top! And it actually really works. Creamy chickpeas, warming toasted pine nuts, refreshingly light basil, and zingy lemon.

INGREDIENTS (serves 4-6)
400g chickpeas (jarred best, tinned work fine too)
4 tbsp tahini
1 lemon
2 garlic cloves
50g pine nuts, toasted
2 tbsp nutritional yeast
100g fresh basil
2-3 ice cubes
Extra virgin olive oil, salt & pepper
METHOD
To a food processor, add the tahini + lemon juice, then blend until a paste forms. Add the chickpeas + 1-2 tbsp of their liquor (aquafaba), then blend again.
Add the basil, pine nuts (save some for garnish) + nutritional yeast - the hummus should begin to turn light green. Whilst blending, add an ice cube or two , stream in some olive oil & continue to blend until creamy.
To serve, spoon into a bowl, top with toasted pine nuts, basil & a swirl of extra virgin olive oil. Enjoy!
My top dip serving suggestion on this occasion, as is the case a lot of the time - serving in a tasty wrap. Here, inspired by the bits lying around in my fridge, I seared some shiitake mushrooms until golden brown, then made a speedy slaw, roasted some chips until crisp, then lathered everything with lashings of that creamy pesto hummus. Might sound like a bit of a weird one, but as far as fridge raids go, I can STILL remember the taste of each of these delicious morsels - absolutely sublime.
